Pitted extra virgin olive oil is olive oil in its purest form. At Frantoio Muraglia we cold-pit the Coratina olives — removing the stone before milling — so only the fruit's flesh is pressed. The result is a rounder, sweeter, more delicate oil that keeps Coratina's green character while softening its edge; and with the oxidation-prone pit removed, it stays fresher for longer. Expect notes of sweet almond and ripe tomato and a clean, gentle pepper, carried by the low free acidity and high polyphenol content that define our early-harvest, cold-extracted oils.
