The lentil, native to Mesopotamia, dates back to the dawn of agricultural civilization. The “Lenticchia di Castelluccio di Norcia I.G.P.”, undoubtedly the most famous and prized lentil in Italy, is grown in Umbria, on the plateau of Castelluccio di Norcia (1,400 m above sea level) in the Monti Sibillini National Park, at the foot of Mount Vettore. Thanks to the climatic conditions and traditional cultivation methods, this lentil is exceptionally tender and of the highest quality, with the unique characteristic of retaining its skin and holding its shape remarkably well during cooking.
